Bourbon Hotel is officially opening this December in Courchevel 1850, taking over the building that housed the Hotel des 3 Vallees on Rue Park City with the pistes of Les Trois Vallees at its door. The five-star will hold 31 rooms, three of them suites, and it arrives from Chapitre Six, the French collection that just stepped into public view.
The interiors deliberately sidestep the alpine convention. Studio Henry has worked the rooms in dark woods, deep velvets and low lighting, closer in feel to a London club than to blond timber and fireside kitsch, with artistic direction and storytelling from Pierre Alexis Guinet. A vinyl bar with a fireplace and a turntable serves as the social room, and the spa runs on contrast therapy, pairing a swimming pool, sauna and hammam with mineral rooms finished in stone and onyx.
Dining centers on Simonetta, an Italian restaurant led by Michelin-starred chef Simone Zanoni, who came from Le George at the Four Seasons Hotel George V in Paris.
Chapitre Six was founded by Nicolas Saltiel, with Caroline de Maigret as artistic director, and the group now runs a collection of design-led hotels across France. Among them are the 35-room Bus Palladium Hotel Club in Pigalle, designed by Studio KO, and Hotel Saint-Georges in Megeve, with interiors by Luke Edward Hall. The group has also taken on the former Hotel 3.14 on the Croisette in Cannes, which will reopen as a five-star in summer 2027.
