Boutique butcher spot, Steak Shop by Rancher’s Reserve, opens its doors

A new destination for local, high-quality cuts has officially opened its doors in West Palm Beach: Steak Shop by Rancher’s Reserve at 500 Palm Street 22. This boutique butcher shop redefines the traditional meat market by offering hormone- and antibiotic-free meats alongside a thoughtfully curated lunch-to-go menu, creating a unique destination for both home cooks and food enthusiasts.

Steak Shop showcases an impressive selection of premium cuts, including wagyu Akaushi beef, Berkshire pork, and house-made specialty sausages. These are sourced directly from Rancher’s Reserve’s own farm in Okeechobee, Florida, and complemented by offerings from esteemed partners like Adam’s Ranch, Roseda Farms, Green Circle Amish Chicken, and Willow Bend Australian Lamb.

"Steak Shop is more than just a butcher shop—it’s a celebration of quality, sustainability, and local craftsmanship," say owners Nick Scalisi and Chris Muneio. "We’re passionate about providing the community with the best meats our ranch and others have to offer. Whether you’re here for a premium cut to grill at home or to enjoy our lunch menu, we want every bite to reflect the care and dedication that goes into our process."

The lunch menu, available Monday through Saturday from 11 a.m. to 2 p.m., features wood-fired wagyu burgers, wagyu bratwursts, crispy chicken wings, and hot signature sandwiches crafted with premium cuts and fresh ingredients. Each dish is designed to showcase the exceptional flavors and quality of locally raised meats.

Steak Shop is part of a broader vision by Scalisi and Muneio to create a "food corridor" in West Palm Beach. Just a short walk away is Fern, their acclaimed farm-to-table restaurant located at 501 Fern Street. Fern has become a local favorite, known for its commitment to sourcing wagyu beef and pork from Rancher’s Reserve and other local farms.

The restaurant offers a dynamic menu that changes with the seasons, featuring dishes like Wagyu Short Rib with Japanese Sweet Potato and Smoked Wagyu Tri-tip with Burrata. Fern also hosts daily happy hours from 4 p.m. to 7 p.m., including specials like Oyster Night every Tuesday and Wine Wednesday with half-off all wine bottles.

Looking ahead, the duo is set to expand their culinary footprint with the upcoming opening of Rueshaw, a luxury steakhouse inspired by Japanese Wagyu traditions. Located next to the Steak Shop in the Flamingo Park neighborhood, Rueshaw will feature a 4,000-square-foot dining area and a 1,200-square-foot speakeasy called "Fancy Bird." The restaurant will showcase meats sourced from Rancher’s Reserve’s two Florida ranches, which collectively house 150 head of Akaushi Wagyu cattle.
