Chef Danny Grant is bringing his next concept to Miami with the debut of Eight Bar, opening October 24 on the first floor of Maple & Ash at Miami Worldcenter. The new neighborhood bistro and raw bar combines Maple Hospitality Group’s signature warmth with a lively, indoor-outdoor design created by Studio K.

Reimagined for Miami’s rhythm, Eight Bar blends polished energy with playful charm—think lush greenery, leopard wallpaper, and marble floors under a lattice dome. The 97-seat space transitions from sunlit garden retreat by day to moody lounge by night, creating a refined yet approachable destination for dinner, happy hour, and soon, brunch and lunch service.

The menu channels the city’s coastal spirit through shareable, seafood-forward dishes and modern bistro classics. Highlights include Crispy Fried Whole Red Snapper with Szechuan-spiced sauce, the Plateau Del Mar seafood centerpiece, Wagyu Skewers, and signature sushi like the King Crab Roll with truffle butter. Guests can also enjoy the celebrated Eight Bar Burger and indulgent Kennebec fries served classic, truffle, or “Get ’Em Dirty.”
The cocktail list mirrors the space’s balance of sophistication and fun, with house creations like Vice City (mezcal, papaya, mango limonada, and mint) and Electric Flamingo (Grey Goose, Lillet Rosé, and bubble gum). A daily happy hour from 4–6 p.m. will feature $8 bites and cocktails, while delivery will be offered exclusively through DoorDash.

Located at 699 NE 1st Ave, Eight Bar Miami will open nightly for dinner—Sunday through Thursday from 4–10 p.m. and Friday through Saturday until 11 p.m.—with additional hours to follow.
