World-class Estiatorio Milos West Palm Beach joins Flavor South Florida

Estiatorio Milos, the acclaimed Greek seafood restaurant by Chef Costas Spiliadis, opened its twelfth location earlier this year in West Palm Beach, bringing its world-class reputation to the waterfront at One Flagler. The restaurant’s February 2025 debut, inside Stephen Ross’s new Class A+ office tower, underscores his broader vision of transforming West Palm Beach into a luxury destination, with Milos serving as a centerpiece of the city’s evolving culinary landscape.

Designed by Tara Bernerd & Partners, the two-level, 294-seat restaurant pairs contemporary elegance with Greek-inspired elements—Pentelikon marble, rich oak, olive trees, and a dramatic floating staircase. A second-floor cocktail lounge with terrace views over the Intracoastal provides an intimate complement to the lively main dining room. The atmosphere reflects Milos’s Mediterranean roots while embracing South Florida’s cosmopolitan flair.

Dining at Milos centers on its signature seafood market, an ice-lined display where guests personally select fish and shellfish flown in daily from the Mediterranean. The kitchen prepares each selection simply and perfectly, whether grilled over charcoal or baked in a salt crust.
Appetizers such as the famed Milos Special—a crisp tower of zucchini and eggplant with saganaki cheese—along with charcoal-grilled octopus and tuna tartare highlight the restaurant’s dedication to fresh, unfussy ingredients. Desserts like Greek yogurt with wild honey or baklava ice cream round out the experience, paired with one of the most extensive Greek wine lists in the U.S.

As part of Flavor South Florida, Milos is currently offering a refined three-course dinner menu for $60 per person, available Monday through Friday. First-course options include a traditional meze platter of tarama, htipiti, dolmadakia, kefalograviera, olives, and pita; a classic Greek salad with heirloom tomatoes; or fried Rhode Island calamari. Guests can also add a raw fish platter or octopus with grilled vegetables for an additional $10.
For the second course, selections feature Dorade Royale with capers, olive oil, and lemon; Hiddenfjord salmon grilled with Santorini Piazzi-style beans; or Halibut Spetsiota baked with onion and tomatoes. Diners can enhance the course with grilled lamb chops ($10) or Milos’s signature lobster pasta, Astako-Makaronada ($20). Dessert rounds out the menu with choices of traditional Greek yogurt with honey and walnuts, spiced walnut cake (Karydopita), or refreshing lemon sorbet.

With locations from New York and London to Athens and Miami Beach, Estiatorio Milos has long been a benchmark for luxury dining. Its arrival in West Palm Beach reflects both global acclaim and local momentum, positioning One Flagler as a new hub for world-class business and fine dining.
