Maass, a new fine dining restaurant led by Michelin-starred chef Ryan Ratino, opens at Four Seasons Hotel in Fort Lauderdale

Broward County in South Florida is now home to a new high-end dining destination, Maass (stylized MAASS), led by renowned chef Ryan Ratino. Known for his expertise in Washington D.C., where he runs two Michelin-starred restaurants, Jônt and Bresca, Ratino brings his culinary prowess to the Four Seasons Hotel and Residences in Fort Lauderdale. Maass, which opened in late December 2023, offers a contemporary menu focused on wood-fired cuisine, influenced by European and Japanese methods.

Maass's a la carte menu features innovative dishes like foie gras macaron with peanut and strawberry, wagyu beef tartlet with French onion, and seafood options such as tuna monaka with caviar. Starters include yellowtail with citrus dashi and charred avocado with caviar, while main courses offer delicacies like brioche stuffed chicken with truffle and A5 wagyu bavette. The dessert menu is equally intriguing, showcasing items like a chocolate mille-feuille and a truffled sundae. Next month, Maass will introduce a tasting menu and a unique counter-service experience at a twelve-seat chef counter.



The cocktail offerings at Maass reflect Fort Lauderdale's maritime charm, with each drink named after famous vessels from pop culture. Options include the Wanderer, a tiki-style drink, and the Solange, a Pisco sour variant. The menu also caters to non-alcoholic preferences with choices like the Rising Sun.


A highlight is the tableside cocktail service, offering classics like the Sidecar and the Manhattan.

Maass is Hive Hospitality's first venture outside Washington D.C. and represents a return to Florida for Ratino, who trained at Le Cordon Bleu in the state. The restaurant's design, by Tara Bernerd & Partners of London, features ocean views and a garden that melds Florida's tropical environment with its yachting culture, enhancing the overall dining experience.
