Miami’s cult-favorite burger joint, Skinny Louie, debuts in West Palm Beach

Miami’s cult-favorite burger joint, Skinny Louie, is officially opening its doors in West Palm Beach at 6 p.m. today, Thursday, June 26 – and to celebrate, they’re giving away 100 free smash’d burgers to the first 100 customers. The new spot at 114 S. Clematis Street marks Skinny Louie’s first location in Palm Beach County and its sixth location overall, expanding the brand’s smash-burger empire beyond Miami. Local burger lovers can expect the same street-style flavor, laid-back vibe, and speedy service that have made Skinny Louie a hit down south.

Skinny Louie keeps its menu simple. There are three core burger builds on offer, each made to order with 100% fresh Black Angus beef and a signature blend of toppings:
Skinny Louie Cheeseburger – griddled smash patty topped with grilled onions, double American cheese, pickles, and the famous “Louie” sauce.
Classic Burger – a throwback cheeseburger loaded with American cheese, lettuce, tomato, onions, plus ketchup and mustard.
Applewood Bacon Burger – for bacon lovers, featuring crispy applewood-smoked bacon, American cheese, and more Louie sauce.

All burgers can be customized (single, double, or even triple patties) and come slathered in Skinny Louie’s special “Louie sauce” – a secret house-made sauce prepared fresh daily that fans can’t get enough of. Each smashburger is cooked to order (the kitchen proudly uses never-frozen beef) and typically hits the counter within minutes of ordering, thanks to the restaurant’s focus on “kickass and speedy customer service”.
Of course, no burger experience is complete without sides and shakes. Skinny Louie serves up crispy shoestring fries and old-school milkshakes in three flavors – Cookies & Cream, Choco Brownie, and Strawberry Bliss.
Not only will Clematis Street be filled with the aroma of sizzling burgers on Thursday night, but the timing couldn’t be better for an evening out downtown. The opening coincides with West Palm Beach's weekly Clematis by Night concert, celebrating 30 years of Clematis by Night with a rhinestone-studded tribute to Elvis, from the nationally recognized Elvis tribute artist Matt Stone.
Skinny Louie may be new to West Palm Beach, but the brand has been on a fast growth trajectory since it first launched in Miami. Skinny Louie opened its very first shop in the Wynwood Arts District in late 2023. In barely over a year, the smash-hit concept has exploded in popularity and expanded across South Florida – and even into New York. The chain now operates five other locations, including outposts in Coral Gables, Little Havana, Miami’s Kaseya Center (home of the Miami Heat), and Wynwood in Miami, as well as a location in Manhattan’s NoMad neighborhood. With the new West Palm Beach restaurant bringing the total to six, Skinny Louie truly has grown from a local Miami favorite into a multi-city phenomenon.
This rapid expansion doesn’t appear to be slowing down, either. The company has already teased several upcoming locations on the way – including new spots in Dania Beach and Aventura in South Florida, plus additional New York City outposts in Penn Station and the Upper East Side. According to co-founder Gonzalo Rubino, the formula behind Skinny Louie’s success is simple: focus on quality and consistency. “Our main goal is to expand our brand and keep a high-quality standard on our product,” Rubino told What Now, noting that they use fresh Black Angus beef and make their popular sauce in-house daily. It’s a strategy that has clearly resonated with burger lovers – Skinny Louie even took home a win at a 2025 “Burger Bash” competition, earning bragging rights for its smashburger prowess.
