Seed Library NYC, the highly anticipated first permanent New York bar from the world’s most awarded bartender, Mr. Lyan (Ryan Chetiyawardana), has officially opened its doors. Tucked into the lower ground floor of the newly reimagined Hotel Park Ave, the bar will be accessed via a dedicated entrance on East 30th Street, positioning it as both a destination and a discreet neighborhood retreat in the heart of NoMad.
A collaboration between Mr Lyan and Renwick Hospitality, Seed Library NYC brings a refined yet nostalgic energy to New York’s cocktail scene. Inspired by the original Seed Library in Shoreditch, East London, the New York outpost carries forward the brand’s signature warmth and creative restraint while embracing the city’s long-standing bar heritage and forward-looking approach to hospitality.
Ryan Chetiyawardana, known globally as Mr Lyan, has built his reputation by consistently rethinking what a modern cocktail bar can be. He opened his first venue, White Lyan, in London in 2013 as the world’s first cocktail bar to operate without perishables—no fruit, no ice, and dramatically reduced waste—introducing a radical, sustainability-led approach built around pre-batched cocktails and innovative ingredients. That same forward-thinking philosophy has carried through his growing portfolio, including Super Lyan, Dandelyan, Cub, Lyaness, Silver Lyan, and Seed Library, earning him widespread recognition as one of the most influential figures in contemporary hospitality.
Over the past decade, Mr Lyan has been named World’s Most Influential Bar Personality, Person of the Decade, and Innovator of the Year by multiple global institutions.
The space has been designed by Lore Group Creative Director Jacu Strauss in partnership with RD Studio, layering organic textures, natural materials, and understated elegance throughout the interior. The design reflects Seed Library’s philosophy of celebrating nature’s variance and artisanal craft, creating an environment that feels intimate, grounded, and quietly expressive.
Globally recognized for pioneering inventive cocktails and championing sustainability, the Mr Lyan team brings its distinctive approach to Seed Library NYC through a tightly curated drinks program.
The menu will feature reimagined classics alongside original creations spanning a wide spectrum of flavors, supported by low-intervention wines, craft beers, artisanal spirits, and sake. A concise selection of bar snacks mirrors the same ethos of thoughtful simplicity found behind the bar, while service will be led by a seasoned team of New York professionals alongside familiar faces from the Lyan portfolio.
Seed Library NYC arrives as part of a broader transformation at Hotel Park Ave, which recently unveiled Park Rose, its flagship restaurant and speakeasy-style bar. Together, Park Rose and Seed Library form a compelling new dining and nightlife anchor for NoMad—one that blends elevated design, confident hospitality, and a clear point of view.
