Hôtel Palais de la Méditerranée has unveiled as the newest addition to The Unbound Collection by Hyatt in France. Set on Nice's Promenade des Anglais and overlooking the Baie des Anges, the Art Deco landmark first opened in 1929 and has been reimagined for a new era.
Behind its early-20th-century façade, built by father-and-son architects Charles and Marcel Dalmas and classified as a historic monument, the hotel has undergone a contemporary redesign, with interiors led by London-based designer Linda Boronkay. Drawing on the building's heritage and the natural features of the Mediterranean coast, her design carries through 173 rooms, including 28 suites, in curved forms, tactile materials and a soft pastel palette.
Dining centers on Zouzou, a third-floor rooftop restaurant where Executive Chef Sébastien Roux plates a Mediterranean menu built on regional, seasonal produce, with panoramic terrace views from afternoon aperitifs to evening cocktails.
The hotel has two pools, an outdoor terrace pool and a heated indoor pool, alongside a wellness area with a fitness center, sauna and steam room. Event space runs to more than 18,000 square feet, centered on the Salon Riviera, the hotel's largest venue, which seats up to 936 theater-style.
The opening joins recent Unbound Collection additions including The Georgian in Santa Monica and Kennedy 89 in Frankfurt, as the brand marks its 10th anniversary in 2026.
