Palm Beach Meats and Moody Tongue launch 10-course wagyu and beer tasting menu

Moody Tongue Sushi at Hilton West Palm Beach is collaborating with acclaimed local butcher Palm Beach Meats to present a 10-course Wagyu tasting menu with optional beer pairings in celebration of Father’s Day weekend. Available Wednesday, June 11 through Saturday, June 14, the $225 tasting menu features ultra-rare Bushu Wagyu sourced from Japan’s Saitama Prefecture, with an optional $55 beer pairing curated by Moody Tongue co-founder and brewmaster Jared Rouben.

The experience marks a standout culinary moment for two MICHELIN-recognized brands: Moody Tongue Sushi earned a 2025 MICHELIN Selection, while Palm Beach Meats received a 2025 Bib Gourmand. The Moody Tongue brand itself made history with its Chicago flagship—the world’s first and only brewery to receive a MICHELIN Star—where Rouben's culinary brewing philosophy blends precise technique with high-end ingredients.

For this special collaboration, Rouben and Palm Beach Meats co-founder Eric San Pedro created a luxurious lineup that includes dishes like Wagyu Spicy Daikon Ponzu, multiple Torched Wagyu Nigiri variations, Diced Wagyu Gunkan with quail egg yolk and chili crisp, and a Hokkaido Uni and Wagyu handroll, all concluding with a signature dessert. The beer pairings span Moody Tongue’s culinary-style brews, including the Toasted Rice Lager, Framboise, and Bourbon Barrel Aged 12 Layer Cake Imperial Stout.


San Pedro is one of only three U.S. importers licensed to bring in Bushu Wagyu—a richly marbled, beer-fed beef raised on a fourth-generation Japanese farm. The unique collaboration reflects the craftsmanship and exclusivity that both Moody Tongue and Palm Beach Meats are known for.

The tasting will take place at Moody Tongue Sushi, which opened in January 2025 inside the Hilton West Palm Beach. The omakase-only concept extends the brand’s presence beyond Chicago and New York, where its fine dining and casual beer-pairing venues have earned widespread acclaim.

Moody Tongue Sushi West Palm Beach continues that tradition, offering guests a refined and immersive experience anchored by Chef Hiromi Iwakiri’s specialty nigiri and Rouben’s artfully brewed pairings.
