A fine dining tasting-menu restaurant from chef Erik Anderson, a French Laundry and Coi alum, and Theorem Vineyards owners Kisha and Jason Itkin, set in an 1888 building on Calistoga's main street. The menu draws on the winery's culinary garden and the Itkins' Montana Wagyu ranch, and the owners have said openly they are aiming for a Michelin star.
