COMO Hotels and Resorts has opened COMO Cordeillan-Bages, a 28-room hotel marking the brand's debut in Bordeaux's Médoc region. Set in a restored 19th-century property in Pauillac, the hotel was realized in collaboration with the Cazes family, owners of Château Lynch-Bages, and is surrounded by the vineyards and châteaux of Bordeaux's most celebrated appellations. It is COMO's third property in France, alongside COMO Le Montrachet in Burgundy and COMO Le Beauvallon near St Tropez.
Gastronomy anchors the hotel, with culinary direction by Fabien Ferré, who in 2024 became the youngest chef to go from zero to three Michelin stars, for his restaurant La Table du Castellet in Provence. The signature restaurant, Le Cordeillan, follows the seasons and the influence of the nearby Atlantic, leaning toward fish, shellfish and vegetables, with meat appearing more sparingly. Executive Chef Mathieu Martin, a native of southwest France, brings Ferré's vision to the kitchen day-to-day, drawing on local producers and the flavors of the region. The menu runs to three, four and six-sequence options at lunch and dinner alongside à la carte, evolving every two to three months. The cellar holds more than 1,600 references, centered on Bordeaux and including wines from Château Lynch-Bages as well as rare bottles such as a 1961 Château Lafite Rothschild and a 2000 Montrachet Grand Cru.
The interiors were reimagined by Italian designer Paola Navone of OTTO Studio, working in a restrained palette of greys, whites and metallic blues with tactile textiles, custom furniture and lime-washed walls. The 28 rooms and suites include two COMO Suites, and Le Cordeillan carries the same approach, with monochrome ceramic centerpieces by artist Benoît Breymand and a vineyard-facing terrace. Guests also have access to the COMO Shambhala wellness philosophy, with an 82-foot heated outdoor pool, a gym, sauna and in-room wellness amenities.
Experiences draw on the Médoc, from private château tastings to cycling the vineyard paths. Through the Château Lynch-Bages partnership, guests receive complimentary daily group tastings and can arrange private visits, with easy reach of three of Bordeaux's five Premiers Crus Classés — Château Lafite-Rothschild, Château Latour and Château Mouton-Rothschild — along the Route des Châteaux. VINIV offers a bespoke winemaking experience guided by the Cazes family's technical directors. The restored village of Bages is a six-minute walk away, with pine forests and Atlantic beaches about 19 miles from the hotel.
