Coral Gables gets its first taste of Madrid's Quintín Ultramarinos at Ponce Park

Coral Gables just got its first real taste of one of Madrid's most beloved hospitality concepts. The Allen Morris Company hosted an intimate preview event at Ponce Park, offering guests an early glimpse into the energy, design, and atmosphere of Quintín Ultramarinos — the Madrid-born restaurant set to anchor the development's ground-floor dining and retail program when Ponce Park opens.

The evening reflected exactly what Quintín will bring to the project — warmth, expressive design, and the kind of social rhythm that defines Madrid's most beloved dining destinations. Guests were welcomed into the development for a layered, immersive experience: a live flamenco dancer, a Spanish guitarist, and a curated lineup of specialty cocktails, mocktails, wine, and light bites developed in partnership with the Quintín team. The intent was less press preview and more an honest taste of the lifestyle Quintín will bring to Coral Gables full-time.

The event also welcomed David McIntyre of D.ream International — the global hospitality group supporting Quintín's expansion beyond Spain, including its upcoming presence at Ponce Park. D.ream's portfolio is among the most respected in luxury hospitality, with iconic concepts like Amazónico, Zuma, COYA, and Roka operating across three continents. Bringing that operational expertise to a Madrid-born restaurant making its U.S. debut signals a serious commitment to translating the Quintín experience without losing what makes it work in Madrid.

"Quintín has always been about more than dining. It is about atmosphere, rhythm and the way people gather," said David McIntyre. "Bringing the concept to Ponce Park gives us the opportunity to translate that Madrid-born energy into Coral Gables in a way that feels authentic to both the brand and the neighborhood."

Quintín itself is part of the broader portfolio of Grupo Paraguas, the celebrated Madrid hospitality group founded in 2004 by Sandro Silva and Marta Seco. The collection has redefined fine dining in Spain through flagship venues including El Paraguas (Asturian cuisine elevated to fine dining), Numa Pompilio (a modern reinterpretation of Italian tradition), Amazónico (the Latin American–inspired concept now operating in London, Dubai, Monte Carlo, and Miami), and Ten con Ten. Earlier this year, the group inaugurated the iconic Metrópolis building in the heart of Madrid — a sophisticated 7-venue gastronomic complex anchored by a boutique hotel, an international private club, and a rooftop terrace overlooking the city.

The Coral Gables Quintín is being shaped as an all-day dining experience — breakfast, lunch, and dinner — inspired by its Madrid flagship and built around Mediterranean warmth and contemporary hospitality. The space is envisioned with seamless indoor-outdoor flow, an active bar and wine program, and a social rhythm that carries naturally from morning into night.
Located at 3000 Ponce de Leon Boulevard, Ponce Park is an 11-story mixed-use development introducing 58 bespoke residences and 25,000 square feet of curated retail just steps from The Plaza Coral Gables and Miracle Mile. Designed by Zyscovich Architects with interiors by Meyer Davis, the project is currently under construction with completion anticipated for early 2028.
