Madrid’s cult-favorite Quintín Ultramarinos is officially entering the Miami market, locking in a 2028 debut at Ponce Park in Coral Gables.

Developed by The Allen Morris Company, Ponce Park will bring the acclaimed Madrid institution to its 11-story Mediterranean-inspired condominium rising in the heart of Coral Gables. The restaurant will anchor approximately 25,000 square feet of curated ground-floor retail.


Founded in 2015 in Madrid’s prestigious Barrio de Salamanca, Quintín Ultramarinos began as a traditional Spanish gourmet market before evolving into one of the city’s most recognized all-day dining destinations. Known for blending historic Spanish culinary traditions with a contemporary, design-forward atmosphere, the concept serves breakfast, lunch, and dinner alongside a wine program highlighting both Spanish and international selections.

Its Coral Gables outpost marks the second U.S. venture for Grupo Paraguas following the Miami arrival of Amazónico in 2025. In partnership with D.ream International — the global operator behind brands including Zuma and COYA — the group continues to position Miami as a strategic gateway city for internationally established dining institutions.

At Ponce Park, Quintín will translate the warmth and sophistication of its Madrid flagship into a Miami context, incorporating inviting materials, counter seating, and expansive windows that open onto the pedestrian energy of Coral Gables. The design approach mirrors the Mediterranean Revival character that defines both the neighborhood and the architecture of the project itself.

Designed by architect John Cunningham with interiors by Meyer Davis, Ponce Park will feature 58 bespoke residences with private elevator entries, Italian-crafted kitchens, expansive terraces with summer kitchens, and European-inspired finishes throughout. Completion is anticipated in early 2028, with residences exclusively represented by ONE Sotheby’s International Realty starting at approximately $3.1 million. Retail leasing is being handled by Vertical Real Estate.

With Quintín securing its place at Ponce Park, Coral Gables adds another globally recognized dining institution to its evolving culinary landscape — and the development further strengthens its position as a residential address shaped as much by international hospitality as by architecture and design.
