Élephante, the design-driven, Mediterranean-inspired restaurant from California-based Wish You Were Here Group, has just unveiled that its set to take over the former Almond space at 207 Royal Poinciana Way on Palm Beach—bringing a globally recognized hospitality brand to one of the island’s most historic storefronts.

Town Council approvals earlier this month cleared the way for the restaurant’s arrival, along with streetside outdoor dining and a companion market concept next door at 208–210 Sunset Avenue.

Founded by Australian-born restaurateur Nick Mathers, Élephante has become known for its airy interiors, coastal energy, and all-day-to-night atmosphere, with locations in Santa Monica and Scottsdale. Mathers says the Palm Beach outpost will be tailored specifically to the town, with a menu and identity designed to feel “very, very Palm Beach specific.”

The windows and doors that open to the outdoor dining area along Royal Poinciana Way will remain, as will the ceiling, which can open and close as needed, said Keith Spina of Spina O'Rourke and Partners, the architect for the project.

Beyond the restaurant, the project expands into neighboring storefronts on Sunset Avenue, which will be combined into a European-style market offering fresh breads and croissants, sandwiches, coffee, smoothies, and juices—designed for grab-and-go mornings and casual daytime visits.

The market is positioned as a complement to the area rather than a competitor to nearby Main Street by The Breakers.
