The Bastion Collection, the group behind Le Jardinier, is replacing Tavola with a pizza and pasta bar led by its executive pastry chef, Joel Robuchon alum Salvatore Martone. The sourdough pies use a 55-year-old starter and ferment for up to 72 hours.
